Menu Planning Monday

This Weeks Menu

Sunday-  We will be at my dads for Father's day, I'm bringing dessert.  Haven't decided between this Strawberry Pretzel dessert that Matthew loves or the peanut butter pie.  Maybe I will just make both.  We'll see how ambitious I am come Saturday and Sunday!





Monday-  I'll be gone to a Cardinal game but have an easy supper for Matthew to make himself
                 BLT and fries

Tuesday-  Grilled Dinner-  Pork Chops, Potatoes, and Zucchini.  Can I tell you how much I truly love grilling complete dinners, no mess inside.  I love it.  And grilled vegetables and potatoes are my summer favorites!

Wednesday-  Pollo Loco from last week, never ended up making it.
Pretty sure every week I don't make something on the list

Thursday-  Leftovers

Friday-  Italian Beef on Hoagies, salad, watermelon

Menu Planning Monday

Monday- Pollo Loco from Plain Chicken, recipe can be found here.  Every time we go to local Mexican place I order this so was pretty excited when I saw this recipe.  Going to give it a try!


Tuesday  BBQ Chicken and Cheese Quesadillas/  Salad


Wednesday-  Steak, Grilled Potatoes, Asparagus

Thursdays- Leftovers

Friday-  Hamburgers, Roasted Zucchini and Fries

I also want to try a healthy dessert/ snack this week.  Maybe this one, healthier version of the Wendy's Frosty

Or this healthy homemade strawberry ice cream

Perfect for Toddlers

 I have been blessed with two picky eaters!  It has been a struggle to get our boys to ever try anything new.   They would seriously live on fruit if we would let them.  Noah loves pasta, but won't touch bread or anything that resembles it.  Carson loves bread but won't eat any pasta besides mac and cheese.  Carson also won't eat any veggies at the moment and it really bothers me.  Noah likes green beans and carrots so at least we can get him to eat some.  
I don't know exactly why I decided to buy these Peter Rabbit Organic food puree pouches one day for the boys to try but I did and it turns out Carson loves them.  He has been eating 1-2 a day.   I'm in love with them because
 1) they are soooo easy
2) they are just  100% whole fruit and veggie puree with nothing added.  They are USDA certified organic
3) Awesome for travel and eating out,  I can just keep one in my purse or diaper bag all the time since they do not need refrigeration until opened
4)  I can get some veggies in Carson.  Some of them are just fruit blends but others have veggies as well.  Now I'm sure the fruit to veggie ratio is more on the fruit side but I will still take it.  We have tried all of these  blends and so far Carson has liked them all.

I'm not sure who all has them but our Wal- Mart currently does and they are $1.68 each. They are on the pricier side to serve at every meal but for right now we are going to use them until we implement the whole, You eat what we eat business.  I'm completely dreading it but know we need to start doing it once we are home together for awhile.

Tuesday-  Homemade Pizza, I have been wanting pizza for a few weeks so it's about time!

Thursday- Leftovers

Friday, Saturday Hubs is out of town, no cooking for this girl!

Having an easy meal week this week!

Random Thursday

It's Thursday....
Obviously I missed what I'm loving Wednesday but I had some things to share so I'm doing it today instead!

1)  New App I just downloaded for my phone, have seen some bloggers blog about it and thought I would give it a try myself.  Checked it out last night and does seem like it will be fun to use to upgrade my pictures a little bit!  It's a photo editing app, called Beautiful Mess, you can check it out here.

2) My husband ordered me a new vaccum and it should be in tomorrow.  I'm OCD and weird and so that excites me.  Just a little background, our old house had 1 room of carpet we didn't need a nice vaccum so we never invested in one.   Then 2 years ago we moved into a new house that was bigger and full of carpet.  I have been using the same vacuum.  This vacuum, I may add was also  the one my husband used in college, which was about 10 years ago.  We are getting the Shark Navigator, Professional Lift Away and we also scored a great deal on it so win-win!


3)  I made it running 11.1 miles yesterday.  It was my last long, push run before the race.   I won't run any farther until June 2nd.  Last week was really rough and thankfully,  yesterday was easier.  I may contribute it to what my mom calls "gu" .  I have been trying Shot Blocks with my mom the last few runs but finally got myself some gu and brought it with me today.  I had two during my run and I really think it did make a difference!


4)  Along the same line, 2 weeks from today my two sisters, momma and I will be on a plane to sunny San Diego!  We don't get much quality time together, so I'm so excited and know we are going to have a blast.  Watch out for lots of pictures !  

5)  I'm having a garage sale this weekend, and am almost ready.  Boy is there way too much work that is involved in them!  It always sounds good in my head, but not so fun actually putting it together.  Although it did get my butt moving on the purging goal I have had for quite a while.  I did purge a lot but really could still do more.  You gotta start somewhere.  

6) I am loving my current nail and toe polish color.  I'm not a nail polish snob,  I don't generally have nails so there are usually without, but I've had some tips on for awhile now and am loving having some color.  Wet and Wild- Heatwave is my current.


7) It's pretty much popsicle season and that makes me happy.   I love popsicles so much and especially these!   We are almost finished with our first box of these already.  The boys and I took a water break yesterday, sat on the porch and had some.  Soo yummy!  Now to find some coupons, because they aren't very cheap!

8)  Bought some new black shoes.  They are wedges, they are strappy and I was able to walk really well in them.  They are perfect.  I  never did find any last year and am starting this year off right with these cuties.

9)  Carson is a pro this week at saying "thank you" and its down right adorable.  He adores me, and  I love it.
Noah has been in trouble a lot lately and has started doing this pouty walk to his room on his own.  I feel bad but he looks so cute moping.  Even though I have had to discipline to no end lately, I'm still " his best friend"  and he still "love you so much mommy"  so we are good.  And " mommy- daddy days are my favorite"  He loves days with us.  Insert smile!

Menu Planning Monday


Quick and Easy Menu this Week
Not the healthiest week we have had but my stress levels need to go DOWN this week and I'm trying to help it out!

Monday-  Using one of my meals from my freezer cooking day, Chicken Pot Pie.  Weird for our warm weather but want to use it before it really gets warm here!

Tuesday-  On your own, hubby has a meeting right after work and probably won't be coming home.

Wednesday-  Steak, Rice, Green Beans

Thursday-  Chicken Quesadillas and Salad

Friday-  BLT's and Sweet Potato Fries, I'm having a garage sale so gotta be quick!

Saturday-  Out to Eat, We have lots of good gift cards now since it was just Matthew's birthday!

Menu Plan Monday

I'm back with Menu Plan Monday.  We finally have a normal week of eating at home!



Monday-  Rainbow Chicken


Tuesday- Chicken Stir Fry over rice
I just cook chicken in a skillet with some Teriyaki sauce, add a frozen bag of stir fry veggies, add more  teriyaki  and soy sauce.  Super easy dinner!


Wednesday-  Pork chops on the grill, grilled potatoes, corn

Thursday-  Leftovers

Friday-  Chipotle Chicken Freezer Meal (was supposed to make it a few weeks ago and forgot to take out of the freezer)

Saturday-  Matthew's 30th Birthday!  Party with friends
Burgers and Apple pie were requests from the Birthday boy! We will add some more goodies to the mix too!

Menu Plan Monday



Saturday-  BBQ chicken pitas and sweet potato fries
Not sure where I saw this, but just baked a few chicken breasts.  Cut them into pieces and smothered with BBQ sauce.  Next put BBQ chicken in the pita, add lettuce, cucumber and a salad dressing.  We used Ranch and Chipotle Ranch

Monday -  Our go to Mexican-  quesadilla casserole


Tuesday-  Cilantro Lime Chicken freezer meal
This was one of  the meals I received in our swap so not sure on the exact recipe, but this one looks like it would be similar to what's in my freezer bag


Wednesday-  Steak on the grill pan, Baked potato and green beans

Thursday- Leftovers

Friday-  Baked Chicken, rice pilaf, salad


Saturday-  Wait and see
